Cocktail recipe

A clarified drink with a long process, but the result is a smooth texture and a really refined drink.

Clarified milk punch is a cocktail technique in which an acidic ingredient is used to curdle milk, separating it into curds and whey. The curd clumps act as filters that trap particles so that when a cloudy liquid is poured through them (such as a cocktail with lime juice) it comes out clear. 

Serves one


  • 50ml lemon juice
  • 1tsp vanilla extract
  • 100g sugar
  • 90ml creme de cacao
  • 150ml Tarquins black cherry gin
  • 25ml Heering cherry liquor
  • 100ml double cream
  • 100ml whole milk


1. Heat the lemon juice, sugar, vanilla extract, and creme de cacao on low heat until simmering. 

2. Take off the heat and add Tarquins Black Cherry and Heering. 

3. In a separate bowl, add the double cream and milk and add the cocktail slowly into the cream/milk mixture. 

4. The dairy will curdle when mixed with citrus and the liquid will separate. 

5. Take a funnel and line it with a cheesecloth, pour the liquid through the filter, and allow the curds to settle to clarify the liquid. 

6. Repeat this process a second time to get the smooth, clear, and most refined result. Always keep refrigerated.
